Energy bites and other no-bake ball-shaped treats are the ultimate way to satisfy your dessert cravings without the need to bake and overindulge. With just one bite, the craving is satisfied, and you'll be left feeling good.
One of the many reasons I love making energy balls at home is that they're portable, easy, delicious, and actually healthy!

INGREDIENTS:
- 5 dried figs
- 1 cup carrots, grated
- 1 cup oats
- ½ tsp ground cinnamon
- ½ cup walnuts, ground
- ¼ cup shredded coconut
- Nut butter and spices (optional, to taste)
INSTRUCTIONS:
- Pulse the carrots in a food processor until finely chopped. Remove and set aside.
- Pulse the walnuts and shredded coconut in the food processor until finely ground.
- Add oats and dried figs to the mixture and pulse until well combined.
- Incorporate the grated carrots and, if desired, nut butter and spices. Pulse until the mixture reaches a dough-like consistency.
- Roll the mixture into small balls, approximately the size of a walnut.
- Refrigerate the carrot cake bites for at least 30 minutes to set.
